UNCORK  WITH  PORK--
Pork,"the other white meat", can be enjoyed through the year and many fine wines compliment it. Considering that pork is a "white" meat you may be surprised that many people suggest pairing it with selected red wines.

A boneless pork loin, roasted or grilled until fragrant and bursting with flavors of garlic and rosemary, Goes best with a fine Italian wine like Chanti or any red with some Sangiovese.

Mustard-and-Wine Pork Tenderloin cook it in white wine & Dijon mustard. Pair it with a nice Chardonnay or Pinot Grigio.

CHARDONNAY & CHEESE:
Pappardelle With Pine Nuts, Raisins and Bacon -- A restaurant-style pasta that's easy to make, and a great match with Chardonnay (From Wine Spectator magazine )This pasta dish, from chef Shea Gallante of Wine Spectator Grand Award-winning Cru restaurant in New York, makes use of an unusual combination of ingredients??"bacon, pine nuts, raisins and two kinds of cheese??"to produce a rich, elegant dish that's a great match with Chardonnay.

When picking a chardonnay -- If you don't like the oaky taste of most California Chardonnarys, try a South African or Chilean Chardonnay.  They use more stainless steel.  Our store carries Santa Carolina Chardonnay Reserve from Chile & AU Chardonnay from Australia.
